Smoked Salmon on Toast with…. Pimento Cheese!

TGIF Pimento Cheese lovers!

For the 4th day, which also happens to be a Friday during the period of Lent, I've created a delicious treat featuring smoked salmon and of course pimento cheese!

Here's how:

Toast 2 slices of bread (I've used white)
Spread pimento cheese on one slice
Add chopped red onion (go crazy or hold back - dealer's choice)
Sprinkle on capers (as much or as little as you like)
Add smoked salmon
Top with remaining piece of toast
Enjoy!


Makes a wonderful breakfast sandwich, lunchtime treat or dinner!
