Catfish and Pimento Cheese Grits - *That's* What's For Dinner

In keeping with true #Southern tradition - like with the #Masters and pimento cheese, it seems like the right thing to do in enjoying good ol' catfish with grits for dinner.  But, with a twist.  Many of us like our grits with #cheese, and we call this dish "cheese grits."  So why not incorporate #pimento cheese into this great Southern favorite?

Here I coated the catfish with #Tobasco.  Dredge fish through combo of cornmeal and #Tony's #cajun  spice.  Bake in a 350 oven for 14 minutes or until the fish flakes.

While catfish bakes, cook grits.  When grits are just about done, spoon a heaping helpin of pimento cheese into the grits and stir until well incorporated.

Serve and enjoy!
